A single serve treat, this peanut butter cookie dough is just what you need when you’re tempted to go off-plan.
Do you ever have one of those days, or weeks (or months! I’m starting to sound like the Friends theme song) that makes you want to say “Forget this!” and eat a whole box of doughnuts because you just can’t deal?
Let me offer you an alternative that won’t completely wreck your diet but still feels indulgent. Plus it’s a convenient single serving size so you won’t be tempted to eat a whole bucket.
I’ll be straight with you: This treat is a little higher in carbs than some others, clocking in at 5 net carbs per serving. But it’s still far, far fewer than a doughnut.
Peanut Butter Cookie Dough
Let’s talk ingredients:
We need butter, peanut butter (the natural, unsweetened kind,) and dark chocolate. We also need some less common ingredients.
For sweetener, I like Sukrin Gold here. It’s a low carb brown sugar alternative and I think it gives a little extra depth of flavor. Plus, it’s granulated so it gives that little crunch that you find it regular cookie dough. That being said, if you’d prefer to use my low carb sweetener blend, you certainly can.
The other less common ingredient we need is peanut flour. When I first started making this, I used powdered peanut butter. Then I realized it contains sugar! This peanut flour is the same thing, just without the added sugar.
Then all you need is a fork to stir it all together.
This comes together so fast. I love that I can put the kids to bed and within five minutes be sitting on the couch in my PJs, stuffing my face while watching Netflix.

- In a small bowl, mix together butter and peanut butter with a fork until well blended.
- Add Sukrin Gold and mix, then add peanut flour.
- When thoroughly mixed, stir in chocolate. Enjoy!
