I don’t know what the weather is like where you live, but here in Minnesota things have definitely taken a turn toward the wintry! And there’s nothing I want more after coming in from playing outside in the cold than a steaming hot cup of hot chocolate. Luckily, with this keto hot chocolate mix, I can make some on a moment’s notice!
Keto Hot Chocolate Mix
Back in my non-keto days, I used to love making this hot chocolate recipe from King Arthur Flour, but holy sugar, batman! Not something I want to put in my body these days!
But never fear, with a little tweaking I turned it into a low carb dream! You know it’s a good hot chocolate recipe when it contains loads of chopped chocolate.
I swapped out the milk and dark chocolate for a combination of dark and unsweetened chocolate. You can either use 85% dark chocolate or use a sugar free chocolate like LUV.
We take the chocolate and blitz it in a food processor with a little low carb sweetener. The recipe as written is not terribly sweet, but you can easily scale the sweetener up or down to your liking. Then add cocoa powder and blitz it some more and you’re golden! Just make sure you get a fairly fine texture so your chocolate melts all the way.
You can make this with hot water if you like, or use your favorite low carb milk alternative. I personally use cashew milk with a splash of cream.
Because of the actual chocolate pieces in here, I find using a milk frother to be the best way to get perfect hot chocolate.
If you don’t have a milk frother, I find the best way to incorporate all the chocolate is to stir in the hot chocolate mix to a small amount of milk first, then add the rest.TipThe ratio I recommend for intense chocolatey-ness is 3 tablespoons of mix to 8 oz. of liquid. This adds up to 4.6 net carbs per cup (not including the milk) so if that’s a little too much of a splurge for you, you can still get a decent chocolate flavor with 2 tablespoons. Alternatively, just get yourself a mini mug and have half a serving and enjoy the heck out of it.
Ohhhhhh yes.
I keep telling you, you do NOT have to give up everything and live a life of sadness and deprivation when you go keto. You just need to make smart swaps.
Side note: I highly recommend getting yourself one of these cream whippers. Not only are they the funnest thing EVER, they make perfect whipped cream in moments without any sugar at all. Get one (or at least put it on your Christmas list!)
