Even before going keto, I gravitated toward a lot of ground beef recipes because they tend to be super easy and they don’t require expensive cuts of meat to be full of protein.

I just adore a good meatball. And boy, are these Keto Ricotta Meatballs gooo-ood. They’re made with a blend of ground beef and Italian sausage and are tender and flavorful and huge. Then pockets of warm ricotta cheese blend into the simple tomato sauce to create something most exquisite. You really need to try them.
These Low Carb Meatballs in Creamy Dill Sauce are adapted from a recipe we made often growing up. While the original used oatmeal in the meatballs, these have been adapted to use only low carb ingredients. The sauce contains sour cream and dill and is so good you could eat it with a spoon.
This recipe for Tomato Braised Meatballs is also adapted from a childhood recipe. My grandma used to make porcupine meatballs that had such a uniquely flavored sauce that I just loved. While these no longer have the “porcupine” look that comes from adding rice to the meat mixture, the wonderful warm flavor takes me back to a simpler time. These are perfect served over mashed cauliflower.

Skillet meals are the best, aren’t they? Just one pot from stove to table. A good cast iron skillet is perfect for this. I use it to make my Cheesy Beef Skillet. It goes easily from stovetop to oven to get that golden brown cheese on top.

One of my all-time favorite ground beef recipes are these Low Carb Pasties. The pastry is a bit delicate to work with, but it’s absolutely worth it for these beautiful little meat pies. The best part is that they’re easily frozen so you can have a meal ready to go straight from your freezer!

This Hamburger “Rice” Soup is a low carb take on the classic tomato-based soup. It’s super easy and can be made with frozen cauliflower rice, a can of tomatoes and a pound of ground beef with a few other ingredients. A perfect soup any time of the year!
